Sunny Grilled Chicken
This is such an easy and delicious marinade. It is usually my first choice for Chicken and tastes even better on the grill.
2 lbs boneless skinless chicken breast
Marinade:
2 tsp extra virgin olive oil
1/2 cup lemon juice
1 tsp salt
1/4 tsp crushed red pepper ( I usually add a bit more)
2 large chopped garlic cloves
Mix the marinade together and pour over chicken in a large dish. Place in refrigerator, covered for at least three hours, turning periodically.
Turn on grill at medium high heat, and cook until chicken is done.
I usually serve this with some brown rice and a side salad.
Serves 8
