This serves as a great side dish and almost tastes even better the next day.
Serves 6
1 lb red potatoes quartered, with skin
1 lb fresh green beans
3 cloves garlic, chopped
1/4 cup extra virgin olive oil
1/4 cup Dijon Mustard
Fresh cracked pepper
Kosher salt
Directions:
Boil potatoes until almost done, add green beans and cook until tender. Drain and put back into pot.
Mix the garlic,oil, Dijon, pepper and salt in a bowl until blended. Pour over the potatoes and beans, toss until the dressing is well mixed.
