CHICKEN AL FRESCO



This has become one of our favorites at my home! It is so quick and easy to make and tastes fantastic grilled on the BBQ.



1 lb. boneless/skinless chicken breast, pounded thin
2 Roma Tomatoes
Red Onion sliced thinly, to taste
Mushrooms, to taste
Fresh Basil, to taste  (optional)
Chives, to taste  (optional)
Natural Provolone, 1 slice per breast



Directions: Pound the chicken breasts thin (put into a 1 gallon Ziploc bag and use a mallet)
Make sure they are pounded evenly about 1/2 inch thick. Grill or broil first side, season with sea salt, garlic, and pepper....then flip and add ingredients on top!
( I use Mrs. Dash salt free chicken seasoning)   Make sure to season both sides of chicken.
